Russian Chicken Fritters


  • 5 slices of white bread – crusts removed
  • 125 ml Milk
  • 600 grm chicken meat with NO skin or bones
  • 100 grm Butter – softened
  • Salt and Pepper
  • 2 cups breadcrumbs
  • 90 grm Ghee (or clarified butter)
  • 200 grm Sour Cream


Soak the bread in the milk for about 15 minutes.

Squeeze the milk from the bread well and put into a bowl

Mince the chicken meat in a blender/food processesor

Mix with the bread and then mince again

Mix in the softened butter with salt and pepper and make into a smooth stuffing

Cool your hands under cold running water and then take small amounts of the meat mixture and mould into balls in your hand.

Shape and flatten into fritters.

Roll the fritters into the breadcrumbs and fry in melted ghee for about 5 minutes on each side.

Arrange on a plate and drizzle with the melted butter from the pan.

Serve with sour cream.
